Microbial Detection Indicators

  • Total Number of Colonies
    The total number of colonies is an indicative microbial index, not a pathogenic bacteria index. It is mainly used to evaluate the cleanliness of food and reflect whether the food meets the hygienic requirements during the production process.
  • Coliform Bacteria
    Coliform is one of the commonly used indicator bacteria for food contamination at home and abroad. The detection of coliform bacteria in food indicates that it is more likely to be contaminated by pathogenic bacteria (such as Salmonella, Shigella, and pathogenic Escherichia coli).
  • Mold
    Mold can spoil the food, destroy the color, aroma and taste of the food, and reduce the edible value of the food. The main reason for mold exceeding the standard may be that the raw materials or packaging materials are contaminated by mold, and the sanitary conditions of the product are not properly controlled during the production and processing process.
  • Pseudomonas Aeruginosa
    Pseudomonas aeruginosa is an opportunistic pathogen, widely distributed in a variety of water, air, normal human skin, respiratory tract and intestinal tract, etc. It is easy to survive in a humid environment and has strong resistance to disinfectants, ultraviolet rays, etc. Resistance, there are health risks for people with weak resistance.

Mycotoxins Detection Indicators

  • Aflatoxin B1
    Among natural foods, aflatoxin B1 is the most common and most harmful. Quality inspection departments of most countries and regulations stipulate that aflatoxin B1 is one of the mandatory inspection items for most foods.
  • Deoxynivalenol (DON)
    Deoxynivalenol (DON) is one of the important indicators of grain mildew and one of the most widespread natural toxins that contaminate grain and animal feed. People who eat cereals seriously contaminated with DON can cause vomiting, diarrhea, headache, dizziness and other poisoning symptoms.

Quality Inspection Indicators

  • Acid Value
    The acid value mainly reflects the degree of rancidity of the oils and fats in the food.
  • Peroxide Value (POV)
    The peroxide value mainly reflects whether the oil is oxidized and deteriorated. With the oxidation of oil, the peroxide value will gradually increase. Although it generally does not cause damage to human health, it can cause gastrointestinal discomfort, diarrhea and other symptoms in severe cases.
  • Volatile Base Nitrogen
    Volatile base nitrogen is an indicator of animal food spoilage. The higher the volatile base nitrogen content, the more amino acids are destroyed, and the greater the impact on nutritional value.
  • Alcohol Content
    Alcohol content, also known as alcohol content, refers to the number of milliliters of ethanol (alcohol) contained in 100 milliliters of wine at 20°C. Alcohol content is an important physical and chemical index of alcoholic products, and substandard content mainly affects the quality of products.
  • Amino Nitrogen
    Amino acid nitrogen is one of the characteristic quality indicators of soy sauce. The higher the amino acid nitrogen content, the better the quality of soy sauce and the stronger the umami. The unqualified amino acid nitrogen mainly affects the flavor of the product.
